White Bean Salad with Capers and Dill

INGREDIENTS

1/4 cup extra virgin olive oil

1 lemon, juiced

1 teaspoon Dijon mustard

2 cloves garlic, minced

1 tablespoon chopped dill

1 teaspoon kosher salt

1 teaspoon ground black pepper

3 cans white cannellini beans or other white beans

1/4 cup capers

1 shallot, julienned

Salt and pepper to taste

Dill sprigs for garnish

INSTRUCTIONS

In a small bowl, whisk olive oil, lemon juice, Dijon mustard, garlic, chopped dill, kosher salt and ground black pepper until combined.

In a large bowl, add beans, capers and shallot. Pour vinaigrette over the mixture and toss to combine. Season again with kosher salt and ground black pepper to taste. Garnish with dill sprigs.
