Watermelon, Feta and Mint Salad

3 tablespoons white wine vinegar

1 tablespoon honey

2 teaspoons minced thyme

1/3 cup extra-virgin olive oil

Salt

Freshly ground black pepper

6 pounds seedless watermelon, rind removed, cut into 1-inch cubes

1/4 cup roughly chopped fresh mint leaves

1 red onion, thinly sliced

8 ounces feta cheese, crumbled

1/4 cup aged balsamic vinegar

1/2 cup pistachios, toasted and roughly chopped

RECIPE NOTES

Every cookout needs a few refreshing sides, and this unique fruit salad is the perfect accompaniment to offset the smoky meats from the grill. It is simply summer in a bowl, with sweet watermelon, briny feta and a cool pop of mint and features a subtle honey dressing that lets the flavors of the ingredients truly shine.

INSTRUCTIONS

In a small mixing bowl, whisk together vinegar, honey and thyme. Slowly pour in olive oil, while whisking constantly, until combined. Season to taste with salt and pepper.

Place watermelon, mint, red onion, feta and honey dressing in a large serving bowl. Toss gently to coat the watermelon with the dressing. When ready to serve, drizzle balsamic vinegar over the salad and garnish with pistachios.
