1 medium sweet onion

3 tablespoons butter, softened

2 teaspoons Old Bay seasoning

1 teaspoon Cajun seasoning

1 teaspoon Creole seasoning

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

RECIPE NOTES

This mini take on the viral onion boil is simple, cozy, and deeply satisfying. Cooked low and slow in a Le Creuset mini cocotte, the onion softens into something sweet and tender, soaking up melted butter seasoned with Old Bay, garlic, onion, cayenne, and Cajun spice. Finished with a little more of that buttery seasoning and fresh chives, it’s meant to be enjoyed layer by layer—an easy, comforting snack that lives up to the hype without trying too hard.

INSTRUCTIONS

Preheat the oven to 275°F. Using a sharp paring knife, carefully core the center of your onion to create a hollow well, taking care not to cut all the way through.

Fill the cavity with 1 tablespoon of softened butter and place the onion in a Mini Cocotte. Melt the remaining 2 tablespoons of butter, stir in the seasonings and pour the mixture over the onion, letting it pool around the base.

Bake for about 1 hour, or until the onion is soft and the layers peel easily. Spoon the buttery juices from the cocotte over the onion, finish with chopped chives, and serve warm.
