Vanilla Peach Cobbler


Signature Oval Baker

INGREDIENTS

9–10 firm-ripe yellow peaches, pitted and sliced (about 3½–4 pounds)

1 cup (2 sticks) unsalted butter

1 cup dark brown sugar

1/2 cup granulated sugar, plus more for dusting peaches

1 1/2 cups all purpose flour

3 teaspoons baking powder

1 teaspoon kosher salt

1 1/2 cups whole milk

1 tablespoon vanilla bean paste or vanilla extract

1 teaspoon lemon zest

Vanilla ice cream or whipped cream

RECIPE NOTES

This easy peach cobbler is perfect for a summer dinner party—it requires only about 15 minutes of active time, and then it bakes up golden brown in the oven using the Signature Oval Baker. You can serve it hot right out of the oven with vanilla ice cream, or prepare it in advance and serve at room temperature with a spoonful of whipped cream. 

INSTRUCTIONS

Preheat oven to 375°F.

If the peaches are underripe, toss peach slices in a large mixing bowl with 1–2 tablespoons of granulated sugar and let sit at room temperature for 15–20 minutes to soften and release their juices.

Cut butter into roughly 1 tablespoon slices and place on the bottom of a large Oval Baker or baking dish. Place the baker in the preheated oven and allow the butter to melt completely.

Meanwhile, to make the cobbler topping, place the dark brown sugar, granulated sugar, flour, baking powder and salt in a large mixing bowl and whisk until thoroughly combined. Add milk, vanilla bean paste or extract and lemon zest, and whisk just until combined.

Remove baker or baking dish from the oven and top with about two-thirds of the peach slices, distributing them evenly across the bottom of the dish. Pour cobbler topping evenly over the top of the peaches, then place the remaining peaches on top of the topping. Note that the mixture will look very separated, but do not stir as it will combine as it bakes.

Place baker or baking dish in preheated oven and bake until the topping is puffed and golden brown, about 50–55 minutes. Remove from the oven and let sit for 5-10 minutes to cool slightly and set.

Garnish with vanilla ice cream or whipped cream for serving.
