Queso Fundido

INGREDIENTS

2 small poblano peppers, roasted, peeled and chopped

1/4 pound chorizo sausage, cooked and drained

2 tablespoons hot sauce, such as Valentina

1 cup Chihuahua cheese, shredded

1 tablespoon pico de gallo

2 green onions, sliced

Tortilla chips or tortillas

RECIPE NOTES

From our chef partner friends at Mexican restaurant Minero, this queso fundido is sure to be a hit at your next party. Bubbling, melted cheese is combined with roasted poblano peppers, chorizo sausage and hot sauce for an irresistible appetizer with a kick. While the Minero folks are partial to Valentina hot sauce, feel free to use your favorite kind and also adjust the amount to your spice level liking.

INSTRUCTIONS

Preheat broiler on low heat.

Place poblano peppers, chorizo and hot sauce in a large mixing bowl and stir to combine. Pour the chorizo mixture into the bottom of a baking dish and spread evenly over bottom of dish. Top with the cheese and spread evenly over the chorizo mixture. Place baking dish under the broiler and cook until cheese is melted, hot and bubbling, and starting to brown in spots.

Remove from the broiler and garnish with pico de gallo and green onion. Serve hot with tortilla chips and tortillas.
