Pignoli Cookies

INGREDIENTS

1 1/2 pounds almond paste

1 1/2 cups granulated sugar

1 cup powdered sugar

4 egg whites

1 pound pine nuts

An Italian delicacy, it's the one cookie that is on every Italian’s holiday cookie tray. Encrusted in gorgeous, toasty pine nuts featuring next-level chewiness on the inside, this cookie offers an experience unlike any other.

INSTRUCTIONS

Preheat oven to 350°F.

In a large mixing bowl, combine almond paste, granulated sugar, powdered sugar and egg whites (either by hand or in a mixer) until well combined.

Gently roll dough into approximately 1" balls, and then roll in the pine nuts until coated all over. Be careful not to overwork the dough or the pine nuts won't stick.

Place dough balls on a parchment-lined baking sheet. Bake in preheated oven for 15-20 minutes until golden brown but still chewy inside.
