Mole Sauce

INGREDIENTS

  • 1 medium onion, diced
  • 3 small cloves garlic, diced
  • 5 dried ancho chilies, rehydrated and roughly chopped
  • 2 corn tortillas, fried and broken into chips
  • 4 teaspoons kosher salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon dried oregano
  • 2 cups chicken stock
  • 2 tablespoons almond butter
  • 1 1/2 ounces Mexican chocolate

INSTRUCTIONS

Blend all ingredients except chocolate in a blender until smooth.

Pour mixture into saucier and place over medium-low heat. Add the chocolate and stir until melted and smooth.
