Mini Apple Cinnamon Muffins


Set of 2 Mini Muffin Trays

INGREDIENTS

2 cups all purpose flour

3 teaspoons baking powder

1/2 cup brown sugar

1/2 cup granulated sugar

1 teaspoon ground cinnamon

3/4 cup vegetable oil

1/3 cup milk

2 eggs

2 apples, diced into small cubes

 

For the topping:

1/2 cup granulated sugar

1 teaspoon ground cinnamon

4 tablespoons unsalted butter, melted

INSTRUCTIONS

Preheat the oven to 350°F. Dice the apples into small cubes.

In a large bowl, mix the flour, baking powder, brown sugar, granulated sugar and cinnamon. Add the vegetable oil, milk and eggs and mix until just combined. Fold in most of the diced apples, reserving some for the tops.

Divide the batter among the mini muffin cups and top each one with a few pieces of apple. Bake for 12–15 minutes, or until a toothpick inserted into the center comes out clean.

Let the muffins cool for a few minutes, then remove them from the pan. In a small bowl, mix the sugar and cinnamon. Brush the muffins with melted butter, then roll or dip them in the cinnamon-sugar mixture until coated.
