Fig, Thyme and Blue Cheese Spread

INGREDIENTS

1 French baguette

Olive oil

Salt

Pepper

1 cup balsamic vinegar

2 tablespoons light brown sugar

16 ounces Black Mission figs, quartered

4 1/2 ounces Stilton blue cheese

Bunch of thyme

INSTRUCTIONS

Preheat oven to 400 F. Slice baguette on the diagonal into 1/4-inch-thick slices. Brush with olive oil and season with salt and pepper. Toast until golden brown.

In a small saute pan, combine balsamic vinegar and brown sugar. Cook over medium heat until gently bubbling. Reduce heat to a simmer and add figs. Simmer until sauce is reduced by half, about 15 to 20 minutes. Do not overcook.

To assemble, spread cheese on a warm baguette slice. Top with a fig and drizzle with balsamic sauce. Garnish with thyme.
