Off to a Good Start: Lobster and Crab Risotto
First impressions really do matter. So after you’ve welcomed your dinner guests with a special cocktail or a glass of bubbles, be prepared to wow them with a dramatic first course. Beginning your meal with a dish that truly delivers on style and flavor gives the night an effervescent sort of momentum that will set course for an unforgettable time. Classic, luxurious and satisfying, our Lobster and Crab Risotto recipe was developed to impress. The seafood is steamed ahead of time in the Round Wide Oven creating a rich seafood broth that is used to add depth to the risotto – then the risotto is prepared in the Sauteuse and can be held for finishing just before serving. As guests mingle over drinks, add the seafood to the risotto, plate, garnish and enjoy treating your friends to a taste of indulgence.

More Is More: Porcini Braised Short Ribs with Garlic Herb Mushrooms
Rich and meltingly tender, short ribs strike the perfect balance of comfort and luxury for a candlelight dinner in. But we didn’t stop there. Our take on short ribs introduces mushrooms in two different ways to maximize umami and flavor, making it the kind of main course your guests will surely go back for seconds. First, we coat the meaty ribs with porcini powder before searing and braising in red wine in a Braiser. When the ribs are deeply tender and burnished, we top with a beautiful, buttery sauté of golden garlicky mushrooms and fresh herbs. Be sure to pick up a bit more from the butcher than you think you need—this course tends to disappear as soon as you bring it to the table.

Finish Well: Red Wine Dark Chocolate Pots de Crème
Here’s a hosting secret: if you want your guests to forget the time and linger long around the table, do not serve dessert too early. In fact, leave the main course dishes on the table for a while, even after the last bites have been taken. Like a good wine, conversation changes over the course of the night and needs room to breathe. Perhaps it’s time to pour another round or bring out a classic game of cards and dice. Only when everyone has truly settled into the glow of a good night should you bring out dessert. The elegant French classic dark chocolate pots de crème is enhanced with the depth and complexity of red wine as a perfect rich treat to end the night. Arrange the Mini Cocottes on a silver tray for an elegant effect and easy serving. Pass out to your friends and see where a night this sweet takes you.
