Cooking Class: How to Make Crepes at Home

Ubiquitous on street corners and beloved at any hour, crepes are endlessly adaptable – fresh, thin, foldable, and delicately indulgent. Though they may have a reputation for being tricky, making them at home is easier than it seems (and incredibly rewarding!). With a simple batter and a hot pan, you can create a stack ready to be filled, folded, and savored. From sweet classics like berries and cream to savory favorites with meats, cheese or seasonal vegetables, crepes are a blank canvas for whatever you're craving. Here’s how to master the basics—and get inspired to make them your own.

Start With a Basic Batter

No matter how you choose to fold, fill or finish them, crepes are a perfect way to celebrate Le Creuset’s French heritage. A basic crepe batter requires just a few simple ingredients:

  • 1 cup all purpose flour
  • 2 eggs
  • 1 ¼ cups milk
  • ½ teaspoon salt
  • 2 tablespoons melted butter, plus more for cooking crepes

Pour

Heat your Crepe Pan over medium heat for 5 minutes. Lightly grease the pan with melted butter. Quickly pour the batter into the center of the pan, adding enough to coat the bottom (about 3-4 ounces).

Use a wooden rateau to spread the batter across the pan evenly and in a circular motion. The goal is a thin, even layer.

Flip

Cook the crepe until bubbles form and the top is set, about 1 to 2 minutes. The bottom should be lightly browned. Gently loosen the edges with a wooden spatula, then slide it underneath to release the crepe. Flip it confidently—quick and smooth! Cook for another minute on the other side.

Assemble Your Crepes

Crepes can be made ahead of time, refrigerated and reheated before serving. When ready to assemble:

  • Place a cooked crepe on a flat surface.
  • If using a dip or spread, spread that on the upper half of the circle.
  • Top with thinly sliced meat, cheeses, fruit or vegetables.
  • Fold the empty half of the crepe over the filling to create a semi-circle.
  • Fold crepe again in half to create a triangle.
