Basic Aioli

INGREDIENTS

  • 2 garlic cloves, finely chopped
  • 2 large egg yolks at room temperature
  • 2 teaspoons fresh lemon juice
  • 2 teaspoons Dijon mustard
  • 1 1/2 cups extra-virgin olive oil
  • Kosher salt

INSTRUCTIONS

In a medium bowl, whisk together first four ingredients until smooth. Whisking constantly, add the oil in a slow, steady stream, whisking until emulsified. Season with salt. Serve with chilled seafood or crudite.
