Aromatic Slow-Cooked Greens

INGREDIENTS

For the aromatic oil:

  • 1 cup olive oil
  • 4 garlic cloves
  • 6 lemon slices
  • 1/2 teaspoon red pepper flakes

For the greens:

  • 1/4 cup aromatic oil
  • 1 large bunch lacinato kale, cleaned, stemmed and chopped
  • 2 large bunches rainbow chard, cleaned, stemmed and chopped
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper

INSTRUCTIONS

Combine all ingredients for the aromatic oil. Let rest at room temperature for 1 hour, or heat on the stovetop over low heat for 30 minutes. Store in an air-tight container at room temperature.

For the greens, heat 1/4 cup of the oil in the buffet casserole over medium-low heat. Add the greens and saute for 1 minute. Reduce heat to low, then cover and simmer for 15 – 20 minutes or until the greens are tender. Season to taste with salt and pepper.
