Crafted from Enameled Cast Iron

Crafted from our legendary enameled cast iron, the Cassadou has exceptional heat distribution and retention qualities to lock in flavor and keep dishes warm from stove to oven to table. The colorful enameled surface minimizes sticking and staining, requires no pre-seasoning, and is dishwasher-safe for easy cleaning. Just like every other piece in our enameled cast iron family, it’s crafted by French artisans from the finest quality materials. Wide Surface Area

The Signature Cassadou has a wide surface area for cooking, similar to a Braiser or Sauté Pan. This makes it ideal for searing and browning meat and vegetables without crowding. The light-colored interior enamel has a smooth finish to promote caramelization, and allows monitoring of the food while it’s cooking for perfect results every time. Similar to the chef-favorite Stainless Steel Rondeau Pan, it’s also ideal for simmering and reducing sauces, stews and curries – the generous diameter aids in evaporating liquids more quickly.

Generous Depth

With a generous size that is deeper than a Braiser but not as deep as a Dutch Oven, the Signature Cassadou is perfect for recipes that call for shallow frying or pan frying. The enameled cast iron retains heat to keep the oil at the perfect temperature ensuring vegetables and meats come out crisp and tender, not oil-soaked and soggy. The deeper, straight side walls are also great for stir-fries and sautés, since they will contain food as it is being stirred and tossed in the pan to keep the mess on kitchen stovetops and counters to a minimum.

Convenient Handles and Tight-fitting Lid

Just like a sauté pan, the Signature Cassadou has a long stick handle for easy maneuvering on the stove. It also has a helper handle to aid in lifting from oven to table – both are ergonomically designed to aid in transporting a full pot. The tight-fitting lid locks in steam while cooking, as well as returns moisture back to the food to keep it deliciously tender and juicy. It’s topped with a Signature Stainless Steel Knob that is easy to grip, even with bulky oven mitts.
