Sizzling Skirt Steak

Marinade

  • 4 garlic cloves, minced
  • 1/2 yellow onion
  • 1/4 cup white vinegar
  • 1/4 cup canola oil
  • 1 tablespoon hot smoked paprika
  • 1 tablespoon crushed Aleppo chili pepper
  • 2 teaspoons ancho chili pepper
  • 1/2 teaspoon dry oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander

 

Sizzle Platter

  • 2 pounds skirt steak, trimmed of excess fat and cut into 10-inch steaks
  • Kosher salt
  • 1 zucchini
  • 1 poblano pepper
  • 2 tablespoons canola oil
  • 1 ear of corn, kernels sliced off the cob
  • 1 cup cooked fava beans
  • 2 tomatoes, diced large
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro leaves
  • Hot smoked paprika for garnish
