        I made this recipe EXACTLY as it said and it came out PERFECT!!! My friends were amazed....I was amazed, I must say...it made me look like a pro! It also made me a Le Creuset addict! I want everything they make! There is a HUGE difference when cooking with these fine products, and no, I do not work for them! Timeless classics and great recipes...a life worth living! ENJOY! You MUST make this once and stick to the exact game plan of the recipe!

            This recipe is only the second I've tried since getting my Le Creuset in November. I only used 2# beef and it was already cut into 1" chunks. I think the "large potatoes" listed in the recipe must be medium red potatoes since 3 large baking potatoes would never fit. I used 2 baking potatoes and cut them into 1" chunks. I did not peel the potatoes. I had to add more water (2 cups) when I added the green beans (instead of peas) since it was nearly dry. I wondered if all ingredients needed to be submerged; if anyone can answer that I'd appreciate it. I used 3 large onions since we like onion flavor. I substituted red wine vinegar for the wine. Since everything was overdone (but still tasty) I think I'll try changing the 4 hour (total) cook time to 3 hours.

            I chose this recipe because of the many ingredients I already had on hand, like carrots, celery, onion and potatoes. I made a few additions/changes:
            1. I baked at 375 for 2 hours and then added semi-thawed peas plus some sliced mushrooms I had on hand.
            2. An hour later, I tasted it and added more seasonings: salt & pepper, garlic salt, Otis Cafe spice blend, a few dashes of Worcestershire sauce and a dash of balsamic vinegar.
            3. To thicken the stew before serving, I stirred in a few tablespoons of Bob's Red Mill whole wheat pastry flour.
            I thought the flavor was much improved with these adjustments, as compared with the "before" flavor.

            This was lovely - but I never saw what to do with the shallots so I left them out...any suggestions? There is already a lot of onion in the mix!
