    Okay, for the raccoon curious, my verdict is in: fork tender, texture like perfect beef pot roast, with rich and silky meat, flavorful, savory, very lightly gamy (as in, milder than lamb). Delicious.
    If you substitute coon for lamb as I did, plan on a longer braising time of 3 1/2 to 5 hours. Mine was done at about 4 hours. I used the Le Creusete 3.5 Q Braiser.
