Grilled Prawns on Avocado Toast

Prawns

  • 6 large tiger prawns, heads on and shells reserved
  • 3 cloves garlic, crushed
  • 1 red chili, halved lengthwise, deseeded and thinly sliced
  • Olive oil
  • Salt and black pepper

 

Stock

  • 1 tablespoon olive oil
  • Prawn shells
  • 1 small onion, chopped
  • Thumb-sized piece fresh ginger, sliced
  • 3/4 cup coconut milk
  • 1/2 teaspoon light soy sauce
  • 1/2 teaspoon fish sauce
  • Salt and black pepper

 

Salsa

 

  • 1/2 mango, diced small
  • 1/2 red onion, finely chopped
  • 1 tablespoon fresh basil, chopped
  • 1 red chili, finely chopped
  • Juice and zest from 1/2 lime
  • 2 tablespoons olive oil
