Created for the 5 1/2 qt. round Dutch oven


  • 3 lbs. fennel (large dice)

Pickling Ingredients

  • 4 cups cider vinegar
  • 1 cup white wine vinegar
  • 1 cup water
  • 1 cup sugar
  • 2 tablespoons mustard seeds
  • 1 teaspoon dry mustard
  • 1 tablespoon red pepper flakes
  • 1 ground clove
  • 1 bay leaf
  • 1 teaspoon turmeric
  • salt to taste


Bring all pickling ingredients to a boil and allow to cool.

Place raw fennel in the Dutch oven and cover with cooled pickling liquid. Bring to a simmer, and let simmer for 15 minutes.

Allow to cool on the countertop, and refrigerate. Age at least one week before serving.
