Rachel Ashwell's Roasted Potatoes

Rachel's Famous Roasted Potatoes
Preheat oven to 350 degrees
Peel russet potatoes (1 larger size per person)
Cut each potato into 4 to 6 pieces
Par-boil potatoes until slightly soft but not so soft as it would be for mashing
Place in baking pan, lightly sprinkle with flour, and then add small amount of olive oil and sprinkle with salt
Bake at 350 degrees, turning potatoes every 30 minutes for desired crispiness.
This process takes about an hour to get potatoes really crispy.
