Caramel Apple Crumb Pie

For the pie crust

  • 2 1/4 cups flour
  • 3 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 1/2 sticks unsalted butter, cut into tablespoon-size pieces
  • 3 tablespoons vegetable shortening
  • 1/4 cup plus 1 tablespoon ice water

For the crumb topping

  • 1 stick unsalted butter
  • 1 1/4 cups flour
  • 1/2 cup finely chopped pecans
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground fennel seed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cardamom

For the caramel

  • 1/4 cup water
  • 1 cup sugar
  • 1/2 stick butter
  • 1/2 cup heavy cream, room temperature

For the filling

  • 5 cups peeled and chopped apples, mixture of tart and sweet
  • 1/4 cup sugar
  • 2 tablespoons flour
  • 1/2 teaspoon cinnamon
